Let’s prepare together, step by step… Step by step we will prepare together traditional appetizers and pies, desserts, bread, and everyone’s favorite, moussaka. This class covers Greece’s most popular appetizers, like Fava (split-pea purée), Kefalonian zucchini fritters, tzatziki and tirokafteri (spicy feta cheese dip). We will make these simple and delicious dishes together from preparation to serving. Then you will enjoy them and have any questions answered about the chosen products and techniques. At the end of the class you will receive a printout of the recipes with all the necessary notes and step-by-step instructions. We will learn the secrets of traditional Greek pastry doughs and make spinach and meat pies together. These are two of the most famous pies in the country; the meat pie being traditionally Kafalonian. In this class I will teach you how to prepare the pastry, make the perfect filling and bake it properly. As we wait for the pies to finish I will answer any questions you may have so you can make supplemental notes of the two recipes that I will provide. I am sure you love baklava as much as I do! That’s why I couldn’t help but offer this lesson where I will share with you the art of this classic Greek dessert, as well as introduce you to the local almond cake of Kefalonia. In this class you will learn how to make baklava with its crispy phyllo pastry sheets and rich nut filling. I will also show you the techniques for the proper syrup and the perfectly roasted almonds for the almond cake. At the end of the class you will receive the recipes with notes and step-by-step instructions so you can refer to them back home. We love bread in Greece. It accompanies all our meals from breakfast to dinner. In this class we will prepare Lagana, a delicious flatbread traditionally eaten on Clean Monday, the first day of fasting (Lent) before Easter. I will also show you how to make Greek pita bread that can be used to wrap both savory and sweet fillings, including souvlaki. Be prepared to participate fully and really get your hands stuck in! At the end of the class you will receive detailed recipes. Moussaka may have first appeared in Greece in the 20th century, but it remains one of the most famous Greek traditional dishes. Although moussaka has many variations, including a vegetarian version, in this class we will make the traditional recipe with roasted vegetables, ground beef and Mornay sauce. Together we will perform the ritual of preparing moussaka and I will answer all your questions about this favorite dish.
